If you live in Western New York, you already know about Mighty Taco.

The local fast-service taco place known for the Super Mighty, El Niño burrito, and their quirky placemats brought back their blueberry empanadas for the summer, and I’m so glad they did.

The crispy, sugary wonder that is Mighty Taco’s empanada is basically a dessert taquito. Usually available in apple or cherry, the blueberry is a recent release to their menu (and is only available for a limited time).

In addition to being a massive blueberry fan, I also love empanadas, so these were made for me. I’m not going to over-hype them and say their the best thing ever made, but they’re pretty dang good.

The blueberry reminds me of blueberry pie, which goes really well with the friend taquito shell. Much like its meatier counterpart, it’s a great portable dessert.

The next time you swing by Mighty Taco this summer (which if you live in WNY will probably be as soon as you read this post) I would totally recommend adding a blueberry empanada to your order.
